The advantages of end grain boards:
- Durability and longevity: End grain boards are much more resistant to repeated knife impacts. When the knife blade cuts, it penetrates between the wood fibers, allowing the fibers to close after cutting. This reduces wear and visible marks.
- Blade preservation: Unlike plastic or grain boards, end grain boards are gentler on knife blades. The blade encounters less resistance, which helps extend sharpening.
